- Peaches:
- 2 yellow peaches, pitted and sliced
- Peach Glaze:
- 1/2 cup (160 g) peach preserves
- 1 tbsp extra virgin olive oil
- 1 tsp soy sauce
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic, minced
- 1/2 tsp kosher salt
- 1/8 tsp black pepper
- 1/8 tsp red pepper flakes
- Chicken:
- 2 lbs boneless, skinless chicken thighs
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp chili powder
- 2 tbsp extra virgin olive oil
- 1 medium jalapeño pepper, thinly sliced
Instructions
- Prepare the Peach Glaze: In a medium bowl, mix the peach glaze ingredients until well combined. Set aside.
- Season the Chicken: Pat the chicken thighs dry with paper towels. In a small bowl, combine 1 tsp salt, 1/2 tsp black pepper, and chili powder. Rub this seasoning mixture evenly over the chicken.
- Cook the Chicken: Heat 2 tbsp olive oil in a large nonstick skillet over medium heat. Once hot, add the chicken thighs (in batches if necessary). Cook for 5 minutes, flip, then reduce heat to medium-low and cook for another 5 minutes, or until the internal temperature reaches 165°F. Remove the chicken from the skillet and tent with foil to keep warm.
- Cook Jalapeños and Peaches: In the same skillet, raise the heat back to medium and add the sliced jalapeños. Cook for 3 minutes. Then, add the sliced peaches and cook for an additional 3 minutes, until the peaches have softened.
- Combine with Peach Glaze: Pour the prepared peach glaze into the skillet, stirring to coat the peaches and jalapeños evenly.
- Finish the Dish: Return the cooked chicken to the skillet, spooning the glaze over the chicken. Cook for 1-2 minutes, until everything is heated through.
- Serve: Serve warm and enjoy the blend of sweet, spicy, and savory flavors!
