Ingredients

Scale
  • 3 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • Fresh herbs (parsley or chives), for garnish
  • Crusty bread, chips, or crackers, for serving

Instructions

  1. Caramelize the onions:
    • Heat olive oil and butter in a large skillet over medium-low heat.
    • Add the sliced onions, salt, and brown sugar. Stir occasionally, allowing the onions to soften and turn golden brown, about 20-25 minutes.
    • Add the minced garlic and cook for another 2-3 minutes until fragrant. Remove from heat and set aside.
  2. Make the dip base:
    • In a large mixing bowl, combine sour cream, cream cheese, mayonnaise, grated Parmesan, mozzarella cheese, black pepper, and smoked paprika (if using).
    • Stir until smooth and well combined.
  3. Combine the onions and dip mixture:
    • Add the caramelized onions to the dip base and fold in until evenly distributed.
  4. Bake the dip:
    • Preheat the oven to 375°F (190°C).
    • Transfer the dip mixture to an oven-safe dish and smooth the top.
    • Bake for 20-25 minutes, or until the dip is bubbly and golden brown on top.
  5. Serve:
    • Remove from the oven and let it cool slightly before serving. Garnish with fresh herbs like parsley or chives.
    • Serve hot with crusty bread, chips, or crackers for dipping.

Notes

  • For extra richness, add a little extra butter or heavy cream to the dip base.
  • If you want a bit of heat, sprinkle in some red pepper flakes or hot sauce.
  • This dip can be made ahead of time and refrigerated for up to 2 days. Simply bake it when you’re ready to serve.
