- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar (for rolling cookies)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
- Beat in the egg until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the flavored Jello powder until evenly distributed.
- Roll tablespoon-sized balls of dough in the remaining 1/4 cup granulated sugar and place them on the prepared baking sheet.
- Flatten each cookie slightly with the bottom of a glass or your hand.
- Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
