  • 1 package (3 oz) flavored Jello (any flavor)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for rolling cookies)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
  • Beat in the egg until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the flavored Jello powder until evenly distributed.
  • Roll tablespoon-sized balls of dough in the remaining 1/4 cup granulated sugar and place them on the prepared baking sheet.
  • Flatten each cookie slightly with the bottom of a glass or your hand.
  • Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For a more intense color, feel free to use additional Jello mix.
