Ingredients
Scale
- 1 box Jiffy cornbread mix
- 1/3 cup milk
- 1 large egg
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- Optional toppings: sour cream, chopped cilantro, diced tomatoes, jalapeños
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C). Grease an 8×8-inch baking dish.
- Cook beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Season: Add taco seasoning and water to the beef. Simmer for about 5 minutes until thickened.
- Assemble base: Spread the seasoned beef evenly into the prepared baking dish. Top with salsa and sprinkle shredded cheese over the top.
- Prepare cornbread: In a bowl, mix the Jiffy cornbread mix, milk, and egg until just combined.
- Top and bake: Pour the cornbread batter over the beef mixture and gently spread it out. Bake for 20–25 minutes, or until the cornbread is golden and cooked through.
- Serve: Let cool slightly, then slice and serve with your favorite toppings!
Notes
- Feel free to add black beans, corn, or diced green chilies to the beef mixture for extra flavor and texture.
- Make it spicy by using pepper jack cheese or adding a few dashes of hot sauce to the beef.
- Leftovers store well in an airtight container in the fridge for up to 3 days and reheat nicely in the microwave.
- You can double the recipe and bake it in a 9×13-inch pan if feeding a crowd!
