Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel), drained
  • 1 packet taco seasoning
  • 1 (8-ounce) can refrigerated biscuits
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 packet ranch dressing mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (4-ounce) can sliced jalapeños (optional)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray.
  • Brown the ground beef: In a large skillet, cook the ground beef over medium heat, breaking it up as it cooks. Add the chopped onion and bell pepper, and cook until the vegetables are softened. Stir in the taco seasoning and diced tomatoes with green chilies, cooking for an additional 3-5 minutes.
  • Prepare the biscuit base: Spread the biscuit dough evenly on the bottom of the prepared baking dish. Pre-bake the biscuits for 5 minutes, or until they begin to puff slightly.
  • Assemble the casserole: Spread the cooked beef mixture over the partially baked biscuit crust.
  • Make the ranch mixture: In a medium bowl, mix the sour cream, mayonnaise, and ranch dressing mix. Spread this mixture evenly over the beef layer.
  • Top with cheese: Sprinkle the shredded cheddar and Monterey Jack cheeses over the ranch mixture, then top with sliced jalapeños for added spice, if desired.
  • Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown, and the biscuit base is fully cooked.
  • Serve: Remove from the oven and let the casserole cool for a few minutes before serving. Enjoy!

Notes

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.
  • Make it spicier: Add extra jalapeños or a dash of hot sauce for an extra kick.
  • Use ground turkey: Substitute the ground beef with ground turkey for a leaner version of this casserole.
