  • 1 teaspoon maple syrup (optional, for sweetness)
  • 1 clove garlic
  • Salt and pepper to taste

Instructions

  1. To prepare the cashew dressing, drain the soaked cashews and place them in a blender or food processor. Add water, lemon juice, apple cider vinegar, olive oil, maple syrup (if using), garlic, salt, and pepper.
  2. Blend until smooth and creamy, adding more water if needed to achieve your desired consistency.
  3. In a large bowl, combine the cooked couscous, chopped kale, shredded carrots, red onion, cucumber, and cherry tomatoes.
  4. Drizzle the creamy cashew dressing over the salad and toss well to combine, making sure everything is evenly coated.
