Description

A hearty and delicious low-carb Keto Chicken Bacon Ranch Casserole that combines tender chicken, crispy bacon, creamy ranch seasoning, cheddar cheese, and broccoli into a comforting, indulgent dish perfect for any day. This keto-friendly casserole is easy to make, ideal for meal prep, and loved by both keto and non-keto eaters.

Ingredients

Scale

Protein & Meats

  • 2 cups cooked chicken, shredded or diced
  • 6 slices bacon, cooked crisp and chopped

Dairy & Creaminess

  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese, plus extra for topping if desired
  • 1/2 cup heavy cream

Vegetables

  • 2 cups broccoli florets, fresh or frozen (lightly steamed if fresh)

Seasonings

  • 1 tablespoon ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep the Ingredients: Cook the bacon until crisp, then drain on paper towels and chop into bite-sized pieces. If chicken is not cooked, cook and shred or dice it. Chop fresh broccoli into florets and steam lightly to soften if using fresh broccoli.
  2. Combine the Creamy Base: In a large bowl, mix together softened cream cheese, heavy cream, ranch seasoning, garlic powder, salt, and pepper until smooth and creamy.
  3. Mix All Components: Add the shredded chicken, chopped bacon, broccoli florets, and shredded cheddar cheese to the creamy base. Fold everything together gently until evenly incorporated.
  4. Bake the Casserole: Transfer the mixture into a greased baking dish. Optionally, sprinkle extra cheddar cheese on top. Bake in a preheated oven at 350ยฐF (175ยฐC) for 25-30 minutes, or until bubbly and golden brown on top.
  5. Let It Rest and Serve: After baking, allow the casserole to cool for a few minutes so it sets and is easier to slice and serve.

Notes

  • Use room temperature cream cheese for a smoother, creamier texture.
  • Crisp the bacon well to avoid sogginess and add crunch.
  • Donโ€™t overcook broccoli; keep it slightly firm for the best texture and color.
  • Adding extra cheese on top creates a golden, bubbly crust.
  • Let the casserole rest after baking to firm up and make slicing easier.
