Description

Keto Cottage Cheese Cloud Bread is a light, airy, and delicious alternative to traditional bread that’s perfect for those following a low-carb or keto diet. With the richness of cottage cheese, this bread is soft, fluffy, and easy to make. It’s a great choice for sandwiches, toast, or as a side to your favorite keto meals!

Ingredients

Scale
  • 3 large eggs, separated (egg whites and yolks separated)
  • 1 cup cottage cheese (full-fat)
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon almond flour
  • 1/2 teaspoon garlic powder (optional)
  • Salt to taste (about 1/4 teaspoon)

Instructions

  1. Prepare the egg whites:
    • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
    • In a clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form. This can take about 3-5 minutes using an electric mixer.
  2. Make the batter:
    • In another bowl, whisk together the egg yolks, cottage cheese, almond flour, garlic powder (if using), and salt until smooth and fully combined.
  3. Fold the mixture:
    • Gently fold the egg yolk mixture into the beaten egg whites. Be careful not to deflate the egg whites; fold gently until everything is just combined.
  4. Form the bread:
    • Spoon the mixture onto the prepared baking sheet in small mounds, spreading them into round or oval shapes. You should get about 6-8 cloud bread pieces, depending on the size.
  5. Bake the bread:
    • Bake for 25-30 minutes, or until the cloud breads are golden brown on top and firm to the touch. They should be light and fluffy inside.
  6. Cool and serve:
    • Allow the cloud bread to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve immediately or store in an airtight container.

Notes

  • If you don’t have cream of tartar, you can substitute with a few drops of lemon juice or vinegar to stabilize the egg whites.
  • Store any leftover cloud bread in the fridge for up to 3 days or freeze for longer storage.
  • For a savory option, try adding herbs such as rosemary or thyme to the batter for additional flavor.
