Ingredients
Scale
- 3 large eggs, separated (egg whites and yolks separated)
- 1 cup cottage cheese (full-fat)
- 1/4 teaspoon cream of tartar
- 1 tablespoon almond flour
- 1/2 teaspoon garlic powder (optional)
- Salt to taste (about 1/4 teaspoon)
Instructions
- Prepare the egg whites:
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form. This can take about 3-5 minutes using an electric mixer.
- Make the batter:
- In another bowl, whisk together the egg yolks, cottage cheese, almond flour, garlic powder (if using), and salt until smooth and fully combined.
- Fold the mixture:
- Gently fold the egg yolk mixture into the beaten egg whites. Be careful not to deflate the egg whites; fold gently until everything is just combined.
- Form the bread:
- Spoon the mixture onto the prepared baking sheet in small mounds, spreading them into round or oval shapes. You should get about 6-8 cloud bread pieces, depending on the size.
- Bake the bread:
- Bake for 25-30 minutes, or until the cloud breads are golden brown on top and firm to the touch. They should be light and fluffy inside.
- Cool and serve:
- Allow the cloud bread to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve immediately or store in an airtight container.
Notes
- If you don’t have cream of tartar, you can substitute with a few drops of lemon juice or vinegar to stabilize the egg whites.
- Store any leftover cloud bread in the fridge for up to 3 days or freeze for longer storage.
- For a savory option, try adding herbs such as rosemary or thyme to the batter for additional flavor.
