Description

This Keto Jalapeño Popper Casserole is a spicy, creamy, and cheesy low-carb dish that combines the flavors of jalapeño poppers with a hearty casserole. Packed with cream cheese, cheddar, and bacon, it’s the perfect keto-friendly comfort food. Great for a weeknight dinner or a crowd-pleasing side dish at your next gathering!

Ingredients

Scale
  • 1 lb (450g) chicken breast, cooked and shredded (or ground chicken)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 68 jalapeños, sliced (seeds removed for less heat, or leave seeds for extra spice)
  • 1/2 cup cooked and crumbled bacon (about 68 strips)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon fresh cilantro or parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a similar size casserole dish with cooking spray or butter.
  2. Prepare the Creamy Base:
In a large mixing bowl, combine the softened cream cheese, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir until smooth and well-combined.
  3. Assemble the Casserole:
Add the shredded chicken (or ground chicken) to the creamy mixture and stir to combine. Then, fold in the shredded cheddar cheese, Parmesan cheese, sliced jalapeños, and crumbled bacon.
  4. Bake the Casserole:
Spread the mixture evenly in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly, and the casserole is heated through.
  5. Garnish and Serve:
Once baked, remove from the oven and let it sit for 5 minutes before serving. Garnish with fresh cilantro or parsley, if desired.
  6. Enjoy:
Serve hot as a main dish or as a side to your favorite keto meal. Enjoy the creamy, cheesy, and spicy goodness!

Notes

  • Adjust the number of jalapeños based on how spicy you like your dish. You can also leave some seeds in for extra heat.
  • You can substitute ground turkey or sausage for the chicken if preferred.
  • This casserole can be made ahead and stored in the fridge for up to 3 days. Reheat in the oven at 350°F for about 10 minutes until hot.
