Description

Keto “Tatertot” Casserole is a low-carb, cheesy comfort food casserole that recreates the warm, savory flavors of traditional tater tot casserole while using cauliflower instead of potatoes and a crispy almond flour or pork rind topping. This hearty dish is packed with ground beef, melty cheddar cheese, and a rich cream sauce, making it filling, family-friendly, and perfect for keto or low-carb diets.

Ingredients

Scale

Meat Base

  • 1 lb ground beef (80/20 for juiciness)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

Vegetables

  • 4 cups cauliflower florets (fresh preferred), steamed and chopped into tater tot-sized pieces

Cheese Sauce

  • 4 oz cream cheese
  • ½ cup heavy cream
  • 1 ½ cups shredded cheddar cheese

Topping

  • ½ cup almond flour or crushed pork rinds (for crispy topping)

Instructions

  1. Prepare the Meat Base: Brown the ground beef in a skillet over medium heat until fully cooked and browned. Add diced onion and minced garlic; cook until fragrant and soft. Stir in Worcestershire sauce, salt, and pepper. Remove from heat once combined.
  2. Cook the Cauliflower: Steam the cauliflower florets until tender but not mushy. Chop into smaller pieces about the size of tater tots to mimic the classic texture.
  3. Make the Cheese Sauce: In a saucepan, gently warm the heavy cream and cream cheese, stirring until smooth and creamy. Gradually add shredded cheddar cheese, stirring constantly to create a velvety cheese sauce.
  4. Combine Ingredients: In a large bowl, mix the browned meat, chopped cauliflower, and cheese sauce until everything is evenly coated and combined well.
  5. Assemble and Bake: Transfer the mixture to a greased baking dish. Evenly sprinkle the almond flour or crushed pork rind topping over the surface for a crunchy crust. Bake in a preheated oven at 375°F (190°C) for 20–25 minutes or until bubbly and golden on top.

Notes

  • Use fresh cauliflower instead of frozen to avoid watery texture.
  • Do not overcook cauliflower; it should be slightly firm for the right bite.
  • Opt for full-fat cheeses for better melt and creaminess.
  • Let the casserole rest for 5 minutes after baking to set properly.
  • Customize the topping by mixing almond flour with Parmesan cheese for extra flavor and crispiness.
