- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice (fresh or bottled)
- 1 tbsp key lime zest
- 1 package (8 oz) cream cheese, softened
- 1 tsp vanilla extract
Instructions
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture evenly into the bottom of an 8×8-inch pan lined with parchment paper. Chill in the fridge while preparing the filling.
- In a separate bowl, beat softened cream cheese until smooth.
- Add sweetened condensed milk and mix until fully incorporated.
- Add key lime juice, zest, and vanilla extract, and beat until smooth and creamy.
- Pour the filling over the crust and smooth the top.
- Refrigerate for at least 4 hours, or until fully set (overnight is best).
- Slice into bars or squares and serve chilled.
Notes
- Use bottled key lime juice (like Nellie & Joe’s) if fresh key limes are unavailable.
- For extra crunch, add a handful of crushed nuts to the crust.
- Top with whipped cream or toasted coconut for added flair.
- Store leftovers in the fridge for up to 5 days.
