Description

A tangy-sweet no-bake treat with a buttery graham cracker crust and a creamy key lime filling. It’s rich, refreshing, and dangerously addictive—hence the name ‘Key Lime Crack.’


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tbsp key lime zest
  • 1 package (8 oz) cream cheese, softened
  • 1 tsp vanilla extract

Instructions

  1. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  2. Press the mixture evenly into the bottom of an 8×8-inch pan lined with parchment paper. Chill in the fridge while preparing the filling.
  3. In a separate bowl, beat softened cream cheese until smooth.
  4. Add sweetened condensed milk and mix until fully incorporated.
  5. Add key lime juice, zest, and vanilla extract, and beat until smooth and creamy.
  6. Pour the filling over the crust and smooth the top.
  7. Refrigerate for at least 4 hours, or until fully set (overnight is best).
  8. Slice into bars or squares and serve chilled.

Notes

  • Use bottled key lime juice (like Nellie & Joe’s) if fresh key limes are unavailable.
  • For extra crunch, add a handful of crushed nuts to the crust.
  • Top with whipped cream or toasted coconut for added flair.
