Ingredients
Scale
For the Cookies:
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 tsp lime zest (about 2 limes)
- 2 tbsp fresh lime juice
- 1 tsp vanilla extract
- 1/4 cup graham cracker crumbs
For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tbsp fresh lime juice (adjust for desired consistency)
- Lime zest (optional, for garnish)
Instructions
- Prepare the Cookie Dough:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 3 minutes).
- Add the egg, lime zest, lime juice, and vanilla extract, and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the graham cracker crumbs until evenly distributed.
- Form the Cookies:
- Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Gently press down on each cookie dough ball with the back of a spoon to flatten slightly (these cookies will not spread much on their own).
- Bake the Cookies:
- Bake for 10-12 minutes, or until the edges are lightly golden and the center is set.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the Glaze:
- While the cookies are cooling, make the glaze by whisking together the powdered sugar and lime juice in a small bowl until smooth and pourable.
- Once the cookies are completely cool, drizzle the glaze over the top of each cookie.
- Optionally, sprinkle with a little extra lime zest for a burst of color and flavor.
- Serve:
- Enjoy these tangy, sweet Key Lime Pie Cookies with a refreshing drink or as a delightful treat for any occasion!
Notes
- Graham Cracker Crumbs: If you want a stronger graham cracker flavor, you can add more crumbs to the dough. Adjust the texture by adding a bit more flour if the dough becomes too crumbly.
- Glaze Variations: For a thicker glaze, use less lime juice. For a thinner glaze, add more lime juice to achieve the desired consistency.
- Make-Ahead: These cookies can be made ahead of time. Store them in an airtight container for up to 4 days. You can also freeze the unbaked dough and bake them later.
