Description

These Key Lime Pie Cookies bring the classic flavor of a tangy, refreshing key lime pie into a chewy, sweet cookie! With a hint of citrus, a buttery crust, and a creamy glaze, these cookies are a delicious twist on the traditional pie. Perfect for summer gatherings, or whenever you want a zesty, sweet treat!

Ingredients

Scale

For the Cookies:

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp lime zest (about 2 limes)
  • 2 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • 1/4 cup graham cracker crumbs

For the Glaze:

  • 1/2 cup powdered sugar
  • 12 tbsp fresh lime juice (adjust for desired consistency)
  • Lime zest (optional, for garnish)

Instructions

  1. Prepare the Cookie Dough:
    • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
    • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 3 minutes).
    • Add the egg, lime zest, lime juice, and vanilla extract, and mix until smooth.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the graham cracker crumbs until evenly distributed.
  2. Form the Cookies:
    • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
    • Gently press down on each cookie dough ball with the back of a spoon to flatten slightly (these cookies will not spread much on their own).
  3. Bake the Cookies:
    • Bake for 10-12 minutes, or until the edges are lightly golden and the center is set.
    • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  4. Prepare the Glaze:
    • While the cookies are cooling, make the glaze by whisking together the powdered sugar and lime juice in a small bowl until smooth and pourable.
    • Once the cookies are completely cool, drizzle the glaze over the top of each cookie.
    • Optionally, sprinkle with a little extra lime zest for a burst of color and flavor.
  5. Serve:
    • Enjoy these tangy, sweet Key Lime Pie Cookies with a refreshing drink or as a delightful treat for any occasion!

Notes

  • Graham Cracker Crumbs: If you want a stronger graham cracker flavor, you can add more crumbs to the dough. Adjust the texture by adding a bit more flour if the dough becomes too crumbly.
  • Glaze Variations: For a thicker glaze, use less lime juice. For a thinner glaze, add more lime juice to achieve the desired consistency.
  • Make-Ahead: These cookies can be made ahead of time. Store them in an airtight container for up to 4 days. You can also freeze the unbaked dough and bake them later.
