These mini key lime pie tartlets are the perfect balance of tangy lime and creamy filling in a crisp, buttery crust. A fun, individual-sized version of the classic key lime pie that’s sure to impress!

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • ¼ cup unsalted butter, melted

For the Filling:

  • 1 (14 oz) can sweetened condensed milk
  • ½ cup fresh lime juice (about 45 limes)
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • ¼ tsp lime zest (optional)

For the Topping:

  • Whipped cream (store-bought or homemade)
  • Lime wedges or additional lime zest for garnish

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter.
    • If you want an extra lime flavor, mix in 1 tbsp of lime zest.
    • Press the mixture into the bottom of mini tartlet pans or a muffin tin to form small crusts. Press down firmly to create an even base.
    • Bake the crusts for about 8-10 minutes, or until golden and set. Remove from the oven and let them cool while you prepare the filling.
  2. Prepare the Filling:
    • In a mixing bowl, whisk together the sweetened condensed milk, lime juice, egg yolks, and vanilla extract until smooth.
    • Add in ¼ tsp of lime zest for an extra burst of lime flavor (optional).
    • Pour the lime filling into the cooled tartlet crusts, dividing it evenly among each mini tart.
    • Bake for 10-12 minutes, or until the filling is just set (it will still jiggle slightly in the center).
    • Remove from the oven and let the tartlets cool completely at room temperature, then refrigerate for at least 2 hours to firm up.
  3. Assemble and Serve:
    • Once the tartlets are chilled, top each with a dollop of whipped cream.
    • Garnish with lime wedges or additional lime zest.
    • Serve chilled and enjoy!
