Ingredients
Scale
For the Crust:
- 1 cup graham cracker crumbs
- 2 tbsp granulated sugar
- ¼ cup unsalted butter, melted
- 1 tbsp lime zest (optional, for extra lime flavor)
For the Filling:
- 1 (14 oz) can sweetened condensed milk
- ½ cup fresh lime juice (about 4–5 limes)
- 2 large egg yolks
- 1 tsp vanilla extract
- ¼ tsp lime zest (optional)
For the Topping:
- Whipped cream (store-bought or homemade)
- Lime wedges or additional lime zest for garnish
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter.
- If you want an extra lime flavor, mix in 1 tbsp of lime zest.
- Press the mixture into the bottom of mini tartlet pans or a muffin tin to form small crusts. Press down firmly to create an even base.
- Bake the crusts for about 8-10 minutes, or until golden and set. Remove from the oven and let them cool while you prepare the filling.
- Prepare the Filling:
- In a mixing bowl, whisk together the sweetened condensed milk, lime juice, egg yolks, and vanilla extract until smooth.
- Add in ¼ tsp of lime zest for an extra burst of lime flavor (optional).
- Pour the lime filling into the cooled tartlet crusts, dividing it evenly among each mini tart.
- Bake for 10-12 minutes, or until the filling is just set (it will still jiggle slightly in the center).
- Remove from the oven and let the tartlets cool completely at room temperature, then refrigerate for at least 2 hours to firm up.
- Assemble and Serve:
- Once the tartlets are chilled, top each with a dollop of whipped cream.
- Garnish with lime wedges or additional lime zest.
- Serve chilled and enjoy!
Notes
- You can use store-bought mini tartlet crusts if you prefer a quicker option.
- For an even tangier flavor, add an extra tablespoon of lime juice.
- These tartlets are perfect for summer parties or as a refreshing dessert after a big meal.
