- 1 pound kielbasa, sliced
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 potatoes, peeled and diced
- 4 cups chicken broth
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can corn, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large pot or Dutch oven over medium heat, brown the kielbasa. Remove the kielbasa from the pot and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Add the potatoes, chicken broth, tomatoes, corn, oregano, basil, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- Add the kielbasa back to the pot and heat through.
- Serve hot and enjoy!
