Description

A hearty and comforting soup packed with kielbasa, fresh vegetables, and flavorful herbs. Perfect for chilly days and easy to prepare!


Ingredients

  • 1 pound kielbasa, sliced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can corn, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large pot or Dutch oven over medium heat, brown the kielbasa. Remove the kielbasa from the pot and set aside.
  • Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  • Add the potatoes, chicken broth, tomatoes, corn, oregano, basil, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  • Add the kielbasa back to the pot and heat through.
  • Serve hot and enjoy!

Feel free to add other vegetables like bell peppers or green beans for extra nutrition and flavor.
