Description

This vibrant and refreshing parfait combines creamy coconut yogurt with tangy kiwi and zesty lime, topped with fragrant mint and juicy pomegranate seeds. It’s perfect for a healthy breakfast or a light dessert.


Ingredients

Scale
  • 450g coconut yogurt
  • 5 kiwis, peeled and diced
  • ½ lime, zested
  • 3 mint sprigs, leaves picked and chopped
  • 20g pomegranate seeds
  • 1 tablespoon clear honey (optional)

Instructions

  • Strain the Yogurt: Line a fine sieve with 2 sheets of kitchen paper or a square of muslin. Place the sieve over a small bowl and pour in the coconut yogurt. Refrigerate for 4 hours to allow excess moisture to drain off.
  • Prepare the Kiwi Mixture: In a blender, purée half of the diced kiwi. Fold this purée into the strained yogurt along with the lime zest. Discard the liquid from the bowl.
  • Assemble the Parfait: Layer the yogurt mixture and the remaining diced kiwis in small glasses (about 150ml each). Sprinkle a little chopped mint on top of each kiwi layer. Finish with pomegranate seeds and a drizzle of honey, if using.
  • Serve: Serve immediately for the best texture and freshness.

Notes

  • If you don’t have limes, you can substitute with lemon.
  • If you’re short on time, you can skip the yogurt straining step and stir all ingredients together. The parfait will still be delicious but may not hold its shape as well.
