- 1 tbsp gochujang (Korean chili paste)
- 1 tbsp sesame seeds
- 2 green onions, chopped (for garnish)
- Salt and pepper, to taste
- 1 tbsp vegetable oil (for roasting)
Instructions
- Prepare the marinade: In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, brown sugar, garlic, ginger, and gochujang. Stir until the honey and sugar have dissolved and the marinade is smooth.
- Marinate the chicken: Place the chicken in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for maximum flavor.
- Preheat the oven: Preheat your oven to 375°F (190°C). If using a rotisserie, prepare the chicken according to the rotisserie machine’s instructions.
- Roast the chicken: If roasting in the oven, rub the chicken with vegetable oil and season with salt and pepper. Place the chicken on a roasting rack in a roasting pan, breast side up. Roast for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
- Baste the chicken: Every 20-30 minutes, baste the chicken with the leftover marinade to keep it moist and flavorful.
- Finish and serve: Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes. Garnish with sesame seeds and chopped green onions before serving. Serve with steamed rice, vegetables, or a salad for a complete meal.
