Korean Chinese Shrimp Toast is a delicious fusion dish that combines the crispy, savory flavors of traditional Chinese shrimp toast with a Korean twist. This dish features shrimp mixed with a savory paste of seasonings, then spread on toasted bread and fried until golden and crispy.   • 8 slices white bread (crusts removed)
  • 1/2 lb (225g) large shrimp, peeled, deveined, and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon sesame oil
  • 2 teaspoons soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 1 egg, beaten
  • 1/2 cup panko breadcrumbs
  • Vegetable oil, for frying
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Start by chopping the shrimp into small pieces and placing them in a medium bowl.
  2. Add the mayonnaise, gochujang, sesame oil, soy sauce, garlic powder, and ginger powder to the shrimp mixture. Stir well until the shrimp is evenly coated and the mixture has a thick paste-like consistency. If you prefer a smoother texture, you can pulse it in a food processor.
  3. Spread a thin layer of the shrimp mixture onto each slice of bread. Use the back of a spoon to press the mixture evenly.
  4. Dip each slice of bread (shrimp side down) into the beaten egg, ensuring the shrimp mixture sticks.
  5. Next, coat the shrimp side with panko breadcrumbs, pressing gently to make sure the crumbs stick to the shrimp mixture.
  6. Heat about 1/2 inch of vegetable oil in a large skillet or frying pan over medium-high heat. Once the oil is hot, carefully add the bread slices, shrimp-side down. Fry for 2-3 minutes, or until golden brown and crispy. Flip and cook the other side for another 2-3 minutes until crispy and golden.
  7. Remove the toast from the pan and drain on paper towels to remove excess oil.
  8. Cut each slice into small triangles or squares and arrange on a platter. Garnish with sesame seeds, chopped green onions, and fresh cilantro (optional).
  9. Serve immediately with a dipping sauce of your choice, such as soy sauce or sweet chili sauce, and enjoy!

Notes

  • For extra heat, you can increase the amount of gochujang in the shrimp mixture. Adjust to your spice preference.
  • If you don’t have gochujang, you can substitute it with a mix of sriracha and a bit of honey for sweetness.
