This decadent dish combines succulent lamb chops with creamy lobster mash and tender asparagus for a truly indulgent meal!

For the Lamb Chops:

  • 8 lamb chops
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped

For the Lobster Mash:

  • 1 lb potatoes, peeled and cubed
  • 1 cup lobster meat, cooked and chopped
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/4 cup grated Parmesan cheese

For the Asparagus:

  • 1 bunch asparagus, trimmed

Instructions

  • Prepare the Lamb Chops:
    Season lamb chops with salt, pepper, minced garlic, and chopped rosemary. Heat olive oil in a skillet over medium-high heat. Cook lamb chops for 3-4 minutes per side, or until desired doneness. Set aside.
  • Make the Lobster Mash:
    Boil potatoes in salted water until tender, about 15 minutes. Drain and return to the pot. Mash potatoes with milk, butter, and grated Parmesan cheese until smooth and creamy. Fold in the chopped lobster meat.
  • Cook the Asparagus:
    Steam asparagus until tender, about 5 minutes.
  • Assemble the Dish:
    Serve the lamb chops over the lobster mash and add a side of steamed asparagus.

Notes

  • For extra flavor, marinate the lamb chops in garlic and rosemary overnight.
