Description

A hearty bowl of lasagna soup that captures all the flavors of classic lasagna in a comforting, soupy form. Perfect for cozy dinners.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 4 cups chicken or beef broth
  • 1 can (15 oz) tomato sauce
  • 2 tsp Italian seasoning
  • 1 tsp crushed red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh parsley or basil, chopped, for garnish
  • Salt and pepper, to taste

Instructions

  • Cook the meat: In a large pot, cook the ground beef or sausage over medium heat until browned, about 5-7 minutes. Drain any excess fat.
  • Sauté the vegetables: Add the diced onion and garlic to the pot with the meat. Cook until the onion is soft, about 3-4 minutes.
  • Add the liquids: Pour in the diced tomatoes, tomato sauce, and broth. Add the Italian seasoning and crushed red pepper flakes. Stir to combine and bring the soup to a simmer.
  • Cook the noodles: Add the broken lasagna noodles to the soup. Simmer for 10-12 minutes, stirring occasionally, until the noodles are tender.
  • Prepare the cheese mixture: While the soup simmers, mix together the ricotta and mozzarella cheese in a small bowl.
  • Serve: Ladle the lasagna soup into bowls and top each serving with a dollop of the ricotta-mozzarella mixture. Garnish with fresh parsley or basil, and enjoy!
