- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) diced tomatoes
- 4 cups chicken or beef broth

- 1 tsp crushed red pepper flakes (optional)
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- Fresh parsley or basil, chopped, for garnish
- Salt and pepper, to taste
Instructions
- Cook the meat: In a large pot, cook the ground beef or sausage over medium heat until browned, about 5-7 minutes. Drain any excess fat.
- Sauté the vegetables: Add the diced onion and garlic to the pot with the meat. Cook until the onion is soft, about 3-4 minutes.
- Add the liquids: Pour in the diced tomatoes, tomato sauce, and broth. Add the Italian seasoning and crushed red pepper flakes. Stir to combine and bring the soup to a simmer.
- Cook the noodles: Add the broken lasagna noodles to the soup. Simmer for 10-12 minutes, stirring occasionally, until the noodles are tender.
- Prepare the cheese mixture: While the soup simmers, mix together the ricotta and mozzarella cheese in a small bowl.
- Serve: Ladle the lasagna soup into bowls and top each serving with a dollop of the ricotta-mozzarella mixture. Garnish with fresh parsley or basil, and enjoy!
