Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup milk
  • 2 tbsp cocoa powder
  • 1/2 cup peanut butter (creamy or chunky)
  • 3 cups quick oats (or rolled oats)
  • 1 tsp vanilla extract
  • A pinch of salt (optional)

Instructions

  1. In a medium saucepan, combine the sugar, butter, milk, and cocoa powder. Stir over medium heat until the mixture comes to a boil.
  2. Allow it to boil for 1-2 minutes, then remove the saucepan from heat.
  3. Stir in the peanut butter and vanilla extract until fully melted and smooth.
  4. Add the oats and stir to combine, ensuring the oats are well-coated with the chocolate-peanut butter mixture.
  5. If desired, add a pinch of salt for a slightly salty balance to the sweetness.
  6. Drop spoonfuls of the mixture onto a parchment paper-lined baking sheet, forming small cookie shapes.
  7. Let the cookies cool at room temperature for 30 minutes to set. You can also place them in the fridge to speed up the cooling process.
  8. Once set, enjoy your delicious, no-bake Lazy Cookies!

Notes

  • You can substitute the peanut butter with almond butter or sunflower seed butter for a different twist.
  • For a more decadent treat, you can drizzle melted chocolate over the cookies once they have cooled.
  • These cookies will stay fresh in an airtight container for up to a week.
