Description

Lazy Roasted Vegetables are the ultimate fuss-free side dish! Just toss your favorite veggies with olive oil, seasonings, and let the oven do all the work. They’re crispy, caramelized, and incredibly easy to customize for any meal!


Ingredients

  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss all the vegetables with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on the prepared baking sheet.
  4. Roast for 20–25 minutes, stirring halfway through, until veggies are tender and slightly caramelized.
  5. Garnish with chopped fresh parsley if desired. Serve warm!

Notes

  • Use any veggies you have on hand—potatoes, cauliflower, or green beans work great too!
  • Add a sprinkle of Parmesan cheese right before serving for extra flavor.
  • For a spicier kick, toss in some crushed red pepper flakes before roasting.
