  • 4 boneless, skinless chicken breasts
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 1 cup frozen spinach, thawed and squeezed dry
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing the baking dish)

 

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or non-stick spray.

  2. Prepare the Spinach Artichoke Topping:
    In a medium bowl, combine the chopped artichoke hearts, thawed and squeezed dry spinach, cream cheese, Parmesan cheese, mozzarella cheese, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined and smooth.

  3. Season the Chicken:
    Place the chicken breasts in the prepared baking dish. Season both sides of the chicken with salt and pepper to taste.

  4. Top the Chicken:
    Evenly spread the spinach-artichoke mixture over the chicken breasts, covering each one completely.

  5. Bake the Chicken:
    Bake the chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the topping is golden and bubbly.

  6. Serve:
    Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired, and serve hot.

Notes

  • For added flavor, you can sprinkle some extra mozzarella cheese on top of the spinach-artichoke mixture before baking.
