- 1 cup boiling water

- 3 tablespoons fresh lemon juice
- 3 tablespoons olive oil

Instructions
- Prepare the Bulgur:
In a small bowl, place the bulgur wheat and pour the boiling water over it. Stir, cover the bowl, and let it sit for 10-15 minutes, or until the bulgur is tender and the water is absorbed. Once cooked, fluff with a fork to separate the grains. Allow it to cool completely. - Chop the Vegetables and Herbs:
While the bulgur is cooling, chop the parsley, mint, tomatoes, cucumber, and red onion. Make sure everything is finely chopped for the best texture. - Make the Dressing:
In a small bowl, whisk together the fresh lemon juice, olive oil, salt, and pepper. - Assemble the Salad:
In a large mixing bowl, combine the cooled bulgur, chopped vegetables, and herbs. Pour the dressing over the salad and toss gently to combine. Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed. - Serve and Enjoy:
