Description

This Lebanese Tomato Salad is a refreshing and vibrant side dish packed with fresh tomatoes, cucumbers, onions, and a delicious blend of olive oil, lemon juice, and fresh herbs. A perfect addition to any Mediterranean meal!


Ingredients

  • 4 ripe tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the diced tomatoes, cucumber, and chopped onions.
  2. Add the fresh parsley and mint to the bowl.
  3. Drizzle with olive oil and lemon juice.
  4. Season with salt and pepper to taste.
  5. Toss everything together gently to combine.
