- 1 cucumber, peeled and diced

- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the diced tomatoes, cucumber, and chopped onions.
- Add the fresh parsley and mint to the bowl.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper to taste.
- Toss everything together gently to combine.
- Serve immediately or refrigerate for 30 minutes before serving for enhanced flavor.
