Instructions

  • Prepare the Cookie Crust:
    • Preheat your oven to 350Β°F (175Β°C). Grease a 12-cup muffin tin or line it with cupcake liners.
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
    • Divide the cookie dough evenly among the muffin cups, pressing the dough into the bottom and slightly up the sides to form a cup shape.
  • Bake the Cookie Cups:
    • Bake the cookie cups for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and use the back of a spoon to gently press the center of each cup to maintain its shape. Set aside to cool slightly.
  • Make the Lemon Filling:
    • In a medium bowl, whisk together the eggs, granulated sugar, flour, lemon juice, and lemon zest until smooth. Pour the lemon filling into the center of each cookie cup, filling almost to the top.
  • Bake the Lemon Bar Cookie Cups:
    • Return the filled cookie cups to the oven and bake for an additional 12-15 minutes, or until the lemon filling is set and the edges of the cookie cups are golden.
  • Cool and Serve:
