Description

This Lemon Basil Chicken is a light and flavorful dish perfect for summer dinners or any time you crave something fresh. Tender chicken breasts are marinated in a zesty lemon and basil mixture, then pan-seared to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice (from about 1 lemon)
  • 2 tsp lemon zest (from 1 lemon)
  • 3 tbsp fresh basil, chopped
  • 2 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey (optional, for a touch of sweetness)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Marinade:
    In a small bowl, whisk together the olive oil, lemon juice, lemon zest, chopped basil, minced garlic, Dijon mustard, honey (if using), salt, and pepper.
  2. Marinate the Chicken:
    Place the chicken breasts in a large resealable bag or shallow dish. Pour the marinade over the chicken, making sure it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to 1 hour (or overnight for more flavor).
  3. Cook the Chicken:
    Heat a large skillet over medium-high heat. Once hot, add a little olive oil and place the marinated chicken breasts in the skillet. Cook for 6-7 minutes per side, or until the chicken is golden brown and fully cooked through (internal temperature should reach 165°F or 74°C).
  4. Serve:
    Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Serve the chicken with your favorite side dishes, such as roasted vegetables, rice, or a light salad.

Notes

  • For an added burst of flavor, you can also grill the chicken instead of pan-searing.
  • You can make the marinade ahead of time and store it in the fridge for up to 3 days.
  • If you prefer a stronger basil flavor, you can add more fresh basil to the marinade or garnish the chicken with extra chopped basil before serving.
