For the Crust:
- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ¾ cup unsalted butter, softened
- Pinch of salt
For the Lemon Blueberry Filling:
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 3 large eggs
- ½ cup fresh lemon juice (about 2–3 lemons)
- Zest of 1 lemon
- 1 cup fresh or frozen blueberries
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, mix together the flour, powdered sugar, softened butter, and salt until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
- Bake for 15-18 minutes or until the edges are lightly golden. Set aside to cool slightly.
- Make the Filling:
- In a large bowl, whisk together the sugar, flour, eggs, lemon juice, and lemon zest until smooth and well combined.
- Gently fold in the blueberries.
- Bake the Bars:
- Pour the lemon-blueberry mixture over the slightly cooled crust and spread it out evenly.
- Bake for an additional 25-30 minutes, or until the filling is set and just starting to turn golden at the edges.
- Remove from the oven and allow to cool completely.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
- Once the bars are cool, pour the glaze over the top and spread it evenly.
- Chill and Slice:
- Place the bars in the refrigerator for at least 1 hour to allow the glaze to set and the bars to firm up.
- Once chilled, slice into squares and serve.
Notes
- For extra flavor, you can add more lemon zest to the filling.
- Feel free to adjust the sweetness of the glaze by adding more or less lemon juice.
