For the Crust:

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter, softened
  • Pinch of salt

For the Lemon Blueberry Filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • ½ cup fresh lemon juice (about 23 lemons)
  • Zest of 1 lemon
  • 1 cup fresh or frozen blueberries

For the Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice

Instructions

  • Prepare the Crust:
    • Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
    • In a medium bowl, mix together the flour, powdered sugar, softened butter, and salt until the mixture resembles coarse crumbs.
    • Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
    • Bake for 15-18 minutes or until the edges are lightly golden. Set aside to cool slightly.
  • Make the Filling:
    • In a large bowl, whisk together the sugar, flour, eggs, lemon juice, and lemon zest until smooth and well combined.
    • Gently fold in the blueberries.
  • Bake the Bars:
    • Pour the lemon-blueberry mixture over the slightly cooled crust and spread it out evenly.
    • Bake for an additional 25-30 minutes, or until the filling is set and just starting to turn golden at the edges.
    • Remove from the oven and allow to cool completely.
  • Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
    • Once the bars are cool, pour the glaze over the top and spread it evenly.
  • Chill and Slice:
    • Place the bars in the refrigerator for at least 1 hour to allow the glaze to set and the bars to firm up.
    • Once chilled, slice into squares and serve.

Notes

  • For extra flavor, you can add more lemon zest to the filling.
  • Feel free to adjust the sweetness of the glaze by adding more or less lemon juice.
