Description

Instructions

  1. Prepare the Cod: Pat the cod fillets dry with paper towels to remove excess moisture. Season both sides of the fillets with salt and pepper.
  2. Sauté the Cod: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the cod fillets and cook for 3-4 minutes on each side, or until the fish is golden brown and cooked through (internal temperature should reach 145°F/63°C). Once cooked, remove the cod from the skillet and set aside.
  3. Make the Lemon Butter Sauce: In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for 1-2 minutes until the garlic becomes fragrant and golden. Add the lemon juice and lemon zest, stirring to combine. Let the sauce simmer for another minute to thicken slightly.
  4. Finish the Dish: Return the cod fillets to the skillet and spoon the lemon butter sauce over the fish. Cook for an additional minute, basting the fillets with the sauce.
  5. Serve: Transfer the cod fillets to serving plates, drizzle with the lemon butter sauce from the skillet, and garnish with fresh parsley. Serve with lemon wedges on the side.
