Ingredients

  • For the Lemon Cake:
  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp lemon zest
  • 1/2 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • For the Cheesecake Layer:
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in lemon zest, lemon juice, and vanilla extract.
  6. Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Mix until just combined.
  7. Divide batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  8. For the cheesecake layer, beat cream cheese and sugar until smooth.
  9. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  10. Pour the cheesecake mixture into a greased 9-inch springform pan.
  11. Bake cheesecake at 325°F (163°C) for 35-40 minutes or until set. Cool completely, then refrigerate.
  12. To assemble, place one lemon cake layer on a serving plate. Spread the cheesecake layer evenly over it.
  13. Top with the second lemon cake layer.
  14. Mix powdered sugar, lemon juice, and zest to make the glaze. Drizzle over the top.
  15. Refrigerate assembled cake for at least 2 hours before serving.
