- 1 wheel of brie (8 oz)
- 1/4 cup lemon curd
- 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
- 1 teaspoon chopped fresh rosemary (or 1/2 tsp dried)
- 1 tablespoon chopped pecans or walnuts (optional)
- 1 sheet puff pastry (optional, for wrapping)
- 1 egg (for egg wash, if using puff pastry)
- Crackers, toasted baguette slices, or apple slices, for serving
Instructions
- Preheat the oven to 375°F (190°C). Line a small baking sheet with parchment paper.
- If using puff pastry, roll it out slightly and place the brie wheel in the center. Spread the lemon curd evenly on top of the brie. Sprinkle with thyme, rosemary, and chopped nuts if using.
- Fold the pastry up around the brie, sealing the edges. Brush with beaten egg.
- If not using pastry, simply place the brie on the baking sheet, top with lemon curd, herbs, and nuts.
- Bake for 15–20 minutes (without pastry) or 25–30 minutes (with pastry), until the cheese is melty and the pastry is golden brown.
- Remove from oven and let rest for 5 minutes before serving. Serve warm with crackers or fresh fruit.
