1/4 teaspoon salt

Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter; press into a 9-inch springform pan.
- Bake crust for 10 minutes until golden brown; let cool.
- Beat cream cheese until smooth; add sugar and vanilla, then eggs one at a time. Stir in sour cream.
- Whisk lemon juice, cornstarch, and water; mix into cheesecake batter.
- Pour batter over cooled crust; bake for 45-50 minutes until set. Cool completely.
- Beat egg whites, cream of tartar, and salt until stiff peaks form; gradually add sugar.
- Spread meringue over cooled cheesecake; bake for 15-20 minutes until meringue is golden. Cool completely before serving.
