Description

Light, fluffy, and elegant Lemon Mousse Swirls are a delightful dessert that combines zesty lemon flavor with a creamy texture. Topped with a glossy white chocolate glaze and decorated with edible gold leaf, these swirls are perfect for special occasions or a refreshing treat.

Ingredients

Scale
  • For the Lemon Mousse:
    • Β½ cup fresh lemon juice
    • 1 tablespoon lemon zest
    • ΒΎ cup granulated sugar
    • 4 large egg yolks
    • 1 tablespoon cornstarch
    • Β½ cup unsalted butter, cubed
    • 1 cup heavy cream, whipped to soft peaks
    • Yellow food coloring (optional, for vibrant color)
  • For the Glaze:
    • 1 cup white chocolate, melted
    • 1 tablespoon vegetable oil (for a glossy finish)
    • Yellow food coloring (optional)
  • For the Base (Optional):
    • 6–8 round shortbread cookies or any thin biscuit as a base

Instructions

  • Prepare the Lemon Mousse:
    • In a medium saucepan, whisk together lemon juice, lemon zest, sugar, egg yolks, and cornstarch.
    • Cook over medium heat, whisking constantly, until thickened (about 5-7 minutes).
    • Remove from heat and stir in cubed butter until smooth.
    • Let the lemon curd cool completely, then gently fold in whipped cream until light and fluffy. Add food coloring if desired.
  • Pipe the Mousse:
    • Transfer the lemon mousse into a piping bag fitted with a large round tip.
    • On a baking sheet lined with parchment paper, pipe mousse into swirl shapes, starting from the base and spiraling upward.
    • Freeze for at least 2-3 hours until firm.
  • Prepare the Glaze:
    • Melt white chocolate with vegetable oil over a double boiler or in the microwave, stirring until smooth.
    • Stir in yellow food coloring for a lemony appearance. Let cool slightly.
  • Coat the Mousse Swirls:
    • Remove frozen mousse swirls from the freezer and place on a wire rack with parchment underneath.
    • Pour cooled white chocolate glaze over each swirl, ensuring full coating. Let glaze set for a few minutes.
  • Assemble and Decorate:
    • Place each mousse swirl on a round shortbread cookie (if using).
    • Decorate with edible gold leaf or sprinkles. Chill until ready to serve.

Notes

  • For a more vibrant color, use food coloring sparingly in both the mousse and glaze.
  • Edible gold leaf adds an elegant touch but is optional.
