Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the sour cream until the dough is smooth and slightly sticky.
- Use a spoon or cookie scoop to drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges of the cookies are golden brown and the centers are set.
- While the cookies bake, prepare the glaze: In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
- Once the cookies are done, remove them from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Drizzle the lemon glaze over the cooled cookies and allow the glaze to set before serving.
