Description

  • 1/2 cup unsalted butter, softened

  • 1 tablespoon lemon juice

  • 1/2 cup powdered sugar (for coating)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the lemon cake mix, softened butter, egg, lemon juice, and lemon zest. Mix until a soft dough forms.
  • Roll the dough into 1-inch balls using your hands.
  • Place the powdered sugar in a small bowl and roll each dough ball in the powdered sugar until fully coated.
  • Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are set and the tops have a crackled “snowflake” appearance. Be careful not to overbake; the cookies should remain soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
