Description

A refreshing twist on the classic Italian tiramisu, this lemon version features layers of zesty lemon mascarpone cream, delicate ladyfingers soaked in lemon syrup, and a light dusting of lemon zest.


Ingredients

  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup strong lemon-flavored tea (or lemon syrup)
  • 24 ladyfinger biscuits
  • 1 tablespoon vanilla extract
  • Fresh mint or extra lemon zest for garnish (optional)

Instructions

  1. In a mixing bowl, whisk together the mascarpone cheese, heavy cream, powdered sugar, lemon zest, lemon juice, and vanilla extract until smooth and creamy.
  2. In a shallow dish, combine the lemon tea (or lemon syrup) with a bit more lemon zest or juice, if desired.
  3. Quickly dip each ladyfinger into the lemon syrup (do not soak them completely). Place the dipped ladyfingers in a single layer in the bottom of a serving dish or individual cups.
  4. Spread a layer of the lemon mascarpone cream mixture over the ladyfingers.
  5. Repeat the process with another layer of dipped ladyfingers and mascarpone cream.
  6. Cover and refrigerate the tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld.
  7. Before serving, garnish with fresh mint or extra lemon zest for an added burst of flavor.

Notes

  • For a more intense lemon flavor, you can add a tablespoon of lemon curd to the mascarpone cream mixture.
  • If you’d prefer a non-alcoholic version, you can soak the ladyfingers in lemon syrup or lemon tea instead of any liquor-based syrup.
  • This dessert can be made a day ahead, as it gets even better after sitting in the fridge for a few hours.
