- Zest of 1 large lemon
- Juice of 2 large lemons
For the Layers:
- 1 package of ladyfingers (about 24)
- 1 1/2 cups lemon syrup (see below) or store-bought lemon-flavored soda (e.g., San Pellegrino Limonata)
- Optional: 2 tablespoons limoncello for an adult version
For Topping:
- Lemon zest
- White chocolate shavings or powdered sugar (optional)
Instructions
- Make the Lemon Cream:
- In a large bowl, whip the heavy cream until soft peaks form.
- In a separate bowl, mix the mascarpone, powdered sugar, lemon zest, and lemon juice until smooth.
- Gently fold the whipped cream into the mascarpone mixture until light and creamy.
- Prepare the Lemon Syrup:
- In a small saucepan, combine 1/2 cup sugar, 1/2 cup water, and 1/2 cup fresh lemon juice. Heat until the sugar dissolves, then let it cool.
- Alternatively, you can use store-bought lemon soda or add limoncello for a boozy kick.
- Assemble the Tiramisu:
- Quickly dip each ladyfinger into the lemon syrup, ensuring they are moist but not soggy.
- Arrange a single layer of soaked ladyfingers in the bottom of a 9×9-inch dish or similar-sized serving dish.
- Layer the Lemon Cream:
- Spread half of the lemon cream mixture over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and finish with the remaining lemon cream.
- Chill:
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Decorate and Serve:
- Before serving, sprinkle the top with lemon zest and optionally add white chocolate shavings or a dusting of powdered sugar.
- Slice into squares and serve chilled.
