Deliciously moist and zesty patties made with sweet potatoes, black beans, and a fresh lime dressing โ perfect as a vegetarian main or a tasty appetizer.

- 1 large sweet potato (about 1 1/2 cups mashed)
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 large egg (or flax egg for vegan option)
- 2 tablespoons olive oil (for cooking)
- For Lime Dressing:
- Juice of 1 lime
- 1 tablespoon olive oil
- 1 teaspoon honey or maple syrup
- Salt and pepper, to taste
Instructions
- Peel and cube the sweet potato, then steam or boil until tender. Mash and let cool slightly.
- In a large bowl, mash black beans with a fork or potato masher, leaving some texture.
- Add mashed sweet potato, breadcrumbs, red onion, garlic, cilantro, cumin, smoked paprika, salt, pepper, and egg. Mix until well combined.
- Form mixture into 8 evenly sized patties.
- Heat olive oil in a skillet over medium heat. Cook patties for about 4-5 minutes per side until golden brown and heated through.
- Meanwhile, whisk together lime juice, olive oil, honey/maple syrup, salt, and pepper in a small bowl.
- Drizzle the lime dressing over the patties before serving.
Notes
- Use gluten-free breadcrumbs if needed for dietary restrictions.
- To make vegan, substitute egg with a flax or chia egg.
- These patties can be baked at 400ยฐF (200ยฐC) for 20 minutes, flipping halfway, instead of pan-frying.
