Description

Deliciously moist and zesty patties made with sweet potatoes, black beans, and a fresh lime dressing โ€” perfect as a vegetarian main or a tasty appetizer.


Ingredients

  • 1 large sweet potato (about 1 1/2 cups mashed)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 large egg (or flax egg for vegan option)
  • 2 tablespoons olive oil (for cooking)
  • For Lime Dressing:
    • Juice of 1 lime
    • 1 tablespoon olive oil
    • 1 teaspoon honey or maple syrup
    • Salt and pepper, to taste

Instructions

  1. Peel and cube the sweet potato, then steam or boil until tender. Mash and let cool slightly.
  2. In a large bowl, mash black beans with a fork or potato masher, leaving some texture.
  3. Add mashed sweet potato, breadcrumbs, red onion, garlic, cilantro, cumin, smoked paprika, salt, pepper, and egg. Mix until well combined.
  4. Form mixture into 8 evenly sized patties.
  5. Heat olive oil in a skillet over medium heat. Cook patties for about 4-5 minutes per side until golden brown and heated through.
  6. Meanwhile, whisk together lime juice, olive oil, honey/maple syrup, salt, and pepper in a small bowl.
  7. Drizzle the lime dressing over the patties before serving.

Notes

  • Use gluten-free breadcrumbs if needed for dietary restrictions.
  • To make vegan, substitute egg with a flax or chia egg.
  • These patties can be baked at 400ยฐF (200ยฐC) for 20 minutes, flipping halfway, instead of pan-frying.
