Description

  • Ingredients needed for the cake mix (usually water, eggs, and oil)

For the Limoncello Mascarpone Filling:

  • 1 cup mascarpone cheese, softened

  • 1/4 cup powdered sugar

  • 2 tablespoons limoncello (adjust to taste)

  • 1/2 teaspoon lemon zest

  • 1 tablespoon fresh lemon juice

For the Coating:

  • 1 1/2 cups white chocolate chips or candy melts

  • 1 tablespoon coconut oil (optional, for smooth coating)

  • 1 tablespoon limoncello (optional, to add more flavor to the coating)

  • Sprinkles, lemon zest, or edible glitter for decoration (optional)


Instructions

  1. Bake the Cake:
    Preheat the oven according to the instructions on the cake mix box. Prepare and bake the cake in a 9×13-inch baking pan. Allow the cake to cool completely before moving on to the next step.

  2. Make the Limoncello Mascarpone Filling:
    In a medium bowl, combine the softened mascarpone cheese, powdered sugar, limoncello, lemon zest, and fresh lemon juice. Mix until smooth and creamy. Adjust the flavor by adding more limoncello if you prefer a stronger citrus taste.

  3. Crumble the Cake:
    Once the cake is completely cooled, use your hands or a fork to crumble the cake into small pieces in a large bowl. The crumbs should be fine and loose.

  4. Combine the Cake with the Filling:
    Add the limoncello mascarpone filling to the crumbled cake and mix well. You should be able to roll the mixture into balls. If it’s too wet, add a little more cake; if it’s too dry, add a bit more mascarpone or limoncello.

  5. Form the Cake Pops:
    Roll the cake mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Insert a lollipop stick into each ball. You can dip the stick in a bit of melted chocolate before inserting it into the cake ball to help it stay in place.

  6. Chill the Cake Pops:
    Refrigerate the cake pops for at least 30 minutes, or until they are firm enough to dip into the chocolate coating.

  7. Coat the Cake Pops:
    Melt the white chocolate chips (or candy melts) in a heatproof bowl in the microwave, stirring every 20-30 seconds, or using a double boiler. If desired, stir in coconut oil or limoncello for a smoother texture and extra flavor.

  8. Dip the Cake Pops:
    Dip each cake pop into the melted white chocolate, covering it completely. Allow any excess chocolate to drip off. If you like, sprinkle the cake pops with lemon zest, sprinkles, or edible glitter before the chocolate hardens.

  9. Let the Cake Pops Set:
    Place the coated cake pops back on the parchment paper and let them sit at room temperature or refrigerate for a few minutes until the chocolate is fully set.

  10. Serve:
    Once the chocolate has hardened, your Limoncello Mascarpone Cake Pops are ready to be served! Enjoy this citrusy, creamy treat at parties or as an afternoon indulgence.

Notes

  • For a non-alcoholic version, substitute the limoncello with lemon juice and zest, adding more sugar to taste.
