Instructions

  1. Prepare the Cookie Dough:
    In a medium bowl, whisk together the flour, ground almonds, salt, and cinnamon. Set aside.
    In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg, vanilla extract, and almond extract, and mix until combined.
    Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. If the dough is too sticky, wrap it in plastic wrap and refrigerate for 30 minutes to firm up.
  2. Roll Out the Dough:
    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
    Roll out the dough on a lightly floured surface to about 1/8-inch thick. Use a heart-shaped cookie cutter to cut out cookies. For each cookie, make one solid heart and one heart with a smaller heart cut-out in the center (so you can see the chocolate filling once assembled). Place the cookies on the prepared baking sheets.
  3. Bake the Cookies:
    Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
  4. Make the Chocolate Filling:
    In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth. Stir in the vanilla extract. Let the chocolate filling cool to room temperature so it thickens slightly, but still remains spreadable.
  5. Assemble the Cookies:
    Spread a thin layer of chocolate filling on the solid heart-shaped cookie. Top with the heart-shaped cookie with the cut-out center to form a sandwich.
    Optionally, dust the top cookie with powdered sugar for a pretty finish.
