Description

A comforting casserole filled with tender chicken, creamy potatoes, crispy bacon, and melted cheese, topped with green onions for a loaded baked potato-inspired dish.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 lb chicken breast, cooked and shredded
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/2 cup green onions, chopped
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup milk (or more for creaminess)
  • 1/2 tsp paprika (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large pot, boil the diced potatoes in salted water for 10-12 minutes or until tender. Drain and return to the pot.
  3. While the potatoes cook, heat olive oil in a pan over medium heat and cook the chicken until fully cooked. Shred the chicken with two forks.
  4. In a mixing bowl, combine sour cream, ranch dressing, 1 cup cheddar cheese, garlic powder, salt, and pepper. Stir until smooth.
  5. Add the cooked potatoes and shredded chicken to the mixture, then gently stir until evenly combined. If the mixture is too thick, add a splash of milk to achieve your desired consistency.
  6. Transfer the mixture to the prepared baking dish. Top with the remaining 1/2 cup of cheddar cheese, crumbled bacon, and chopped green onions.
  7. Bake for 20-25 minutes or until the casserole is bubbly and the cheese is melted and golden brown.
  8. Optional: Sprinkle with paprika for extra color before serving.
  9. Allow to cool for a few minutes before serving. Garnish with additional green onions if desired.

Notes

  • For a creamier texture, you can add a bit more sour cream or ranch dressing.
  • Feel free to use frozen hashbrowns or pre-cooked potatoes if you’re short on time.
