For the Tater Tots:

  • 1 bag frozen tater tots (about 24 oz)
  • 2 tbsp olive oil (for roasting, optional)

For the Beef Rib Topping:

  • 2 cups cooked beef short ribs (shredded)
  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1/4 cup beef broth
  • Salt and pepper, to taste

For the Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • 1/4 cup crispy bacon bits (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Make the Beef Rib Topping:
    1. Prepare the Beef: If you don’t have pre-cooked beef short ribs, cook them first (either in the oven or slow cooker) until tender. Shred the meat using two forks and set aside.
    2. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and garlic and sauté for 3-4 minutes until softened and fragrant.
    3. Add the Beef: Add the shredded beef rib to the skillet. Stir in Worcestershire sauce, soy sauce, and beef broth. Season with salt and pepper. Cook for 3-4 minutes, allowing the beef to soak up the sauce and become well-coated. Set aside.

    Cook the Tater Tots: 4. Cook the Tots: Preheat the oven according to the instructions on the bag of frozen tater tots. Spread the tots in a single layer on a baking sheet and bake according to package directions until golden and crispy, about 20-25 minutes. 5. Optional (for extra crispy tots): Lightly drizzle with olive oil before baking to make them even crispier.

    Assemble the Loaded Beef Rib Tater Tots: 6. Layer the Tater Tots: Once the tater tots are cooked and crispy, remove them from the oven and arrange them on a serving platter. 7. Top with Beef: Spoon the cooked beef rib mixture evenly over the tater tots. 8. Add Cheese: Sprinkle the shredded cheddar cheese over the beef and return the platter to the oven for 2-3 minutes, just until the cheese is melted and bubbly. 9. Finish with Toppings: Remove from the oven and drizzle with sour cream. Top with sliced green onions, crispy bacon bits (if using), and garnish with cilantro or parsley for freshness.

Notes

  • You can use leftover cooked beef or slow-cooked beef ribs for this recipe. The more tender, the better!
