- 1 tablespoon olive oil (for cooking the beef)
- 1/4 cup diced green onions (optional for garnish)

Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the beef: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned and cooked through, breaking it up into crumbles as it cooks. Drain any excess fat.
- Season the beef: Stir in the ranch seasoning mix, salt, and pepper. Add the sour cream and milk, mixing well until combined and creamy.
- Combine the bake: In a large mixing bowl, combine the cooked rotini pasta, sweet corn, and seasoned beef mixture. Stir in 1 cup of shredded cheddar cheese, reserving the remaining 1/2 cup of cheese for topping.
- Assemble the bake: Pour the pasta and beef mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
- Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.
- Serve: Remove from the oven and let it cool for 5 minutes before serving. Garnish with diced green onions if desired.
