Description

This Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake is a hearty, cheesy, and flavorful casserole packed with ground beef, sweet corn, and rotini pasta. It’s the perfect comforting meal, full of rich cheddar flavor and a tangy ranch kick.

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet ranch seasoning mix
  • 1 1/2 cups cooked rotini pasta
  • 1 can (15 oz) sweet corn, drained
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tablespoon olive oil (for cooking the beef)
  • 1/4 cup diced green onions (optional for garnish)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the beef: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned and cooked through, breaking it up into crumbles as it cooks. Drain any excess fat.
  3. Season the beef: Stir in the ranch seasoning mix, salt, and pepper. Add the sour cream and milk, mixing well until combined and creamy.
  4. Combine the bake: In a large mixing bowl, combine the cooked rotini pasta, sweet corn, and seasoned beef mixture. Stir in 1 cup of shredded cheddar cheese, reserving the remaining 1/2 cup of cheese for topping.
  5. Assemble the bake: Pour the pasta and beef mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
  6. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.
  7. Serve: Remove from the oven and let it cool for 5 minutes before serving. Garnish with diced green onions if desired.

Notes

  • For extra flavor, you can add cooked bacon bits or sautéed mushrooms to the mix.
  • If you prefer a spicier version, add some diced jalapeños or hot sauce to the beef mixture.
