  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 egg
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large russet potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/2 cup milk (for the mashed potatoes)
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
  2. Make the Meatloaf:
    In a large bowl, combine the ground beef, breadcrumbs, 1/4 cup milk, ketchup, Worcestershire sauce, egg, parsley, garlic powder, salt, and pepper. Mix everything together until well combined. Press the meat mixture evenly into the bottom of the prepared baking dish.
  3. Cook the Potatoes:
    Place the cubed potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 12–15 minutes, or until the potatoes are fork-tender. Drain the potatoes, then return them to the pot.
  4. Mash the Potatoes:
    Mash the cooked potatoes with butter and 1/2 cup milk until smooth and creamy. Season with salt and pepper to taste.
  5. Assemble the Casserole:
    Spread the mashed potatoes evenly over the meatloaf in the casserole dish. Sprinkle 1 cup of shredded cheddar cheese over the top of the mashed potatoes.
  6. Bake the Casserole:
    Place the casserole in the oven and bake for 20 minutes, or until the cheese is melted and bubbly.
  7. Add Toppings:
    After baking, remove the casserole from the oven and sprinkle with crumbled bacon and chopped green onions. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  8. Serve:
    Let the casserole cool for a few minutes before slicing and serving. Enjoy!
