Description

This Loaded Potato Meatloaf Casserole combines the hearty flavors of classic meatloaf with creamy garlic-flavored mashed potatoes, melted cheddar cheese, and crispy bacon bits. It’s an easy-to-make, comforting dish that’s perfect for family dinners and guaranteed to please everyone at the table!

    • 1 lb ground beef, extra lean
    • 1/2 cup onion, diced
    • 2 tbsp brown sugar
    • 1 tbsp Worcestershire sauce
    • 1 cup seasoned Italian bread crumbs
    • 1 egg
    • 1 1/2 cups water
  • For the mashed potatoes:
    • 1 (4 oz) package of garlic-flavored instant mashed potatoes
    • 1 1/2 cups cheddar cheese blend, shredded
    • 1/4 cup real bacon bits

Instructions

  • Preheat oven: Preheat your oven to 375°F (175°C).
  • Prepare mashed potatoes: Prepare the instant mashed potatoes according to package directions.
  • Mix meatloaf: In a large mixing bowl, combine the ground beef, diced onion, brown sugar, Worcestershire sauce, seasoned bread crumbs, egg, and water. Mix well until fully incorporated.
  • Assemble casserole: In a baking dish, layer half of the meatloaf mixture. Spread the prepared mashed potatoes over the meatloaf layer, then top with half of the cheddar cheese and half of the bacon bits. Repeat the layering process with the remaining meatloaf mixture, finishing with the remaining cheese and bacon.
  • Bake: Place the casserole in the preheated oven and bake for 40 minutes, or until the meatloaf is cooked through and the cheese is bubbly.
