  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare breading stations: In three separate shallow bowls, place flour, whisked eggs, and a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried basil, oregano, salt, and black pepper.
  • Bread chicken breasts: Dredge each chicken breast in flour, then dip into the whisked eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
  • Brown chicken: In a large skillet, heat olive oil over medium heat. Brown the chicken breasts on both sides for about 3-4 minutes per side.
  • Assemble and bake: Transfer the browned chicken breasts to the prepared baking sheet. Top each breast with marinara sauce and shredded mozzarella cheese. Bake for 15-20 minutes, or until chicken is fully cooked through and cheese is melted and bubbly.
  • Serve: Garnish with fresh parsley and serve with your favorite side dish.

Notes

For extra flavor, you can add Italian seasoning to the breadcrumb mixture.
