Description

A creamy and savory Low-Carb Cream Cheese Breakfast Bake that combines eggs, cream cheese, and cheese into a fluffy, flavorful casserole. This dish is perfect for a low-carb breakfast or brunch and can be made ahead of time for busy mornings.

Ingredients

Scale
  • 8 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage or bacon (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley (for garnish, optional)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized casserole dish with cooking spray or butter.
  2. In a large bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Add the softened cream cheese to the egg mixture, and whisk until smooth and the cream cheese is fully incorporated.
  4. Stir in the shredded cheddar cheese, cooked sausage or bacon (if using), and half of the grated Parmesan cheese (if using) until evenly distributed.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 25-30 minutes, or until the center is set and the top is golden brown and slightly puffed.
  7. Remove from the oven and let it cool for a few minutes before slicing into squares.
  8. Optional: Garnish with chopped fresh parsley and additional grated Parmesan cheese before serving.
  9. Serve warm and enjoy your creamy, low-carb breakfast bake!

Notes

  • You can easily customize this recipe by adding your favorite vegetables like spinach, bell peppers, or mushrooms. Just sauté the veggies first to reduce moisture before adding them to the bake.
  • To make this dish even richer, use full-fat cream cheese and heavy cream.
  • If you prefer a dairy-free version, you can substitute the cream cheese with dairy-free cream cheese and the heavy cream with coconut cream, but the texture may vary.
  • This dish can be made ahead and stored in the refrigerator for up to 4 days. Reheat in the microwave or oven before serving.
