- 2 large eggs

- 1 cup lemon curd (store-bought or homemade)
- 1 cup white chocolate chips
- 2 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, flattening each slightly. Make a small indentation in the center of each cookie with your thumb.
- Fill each indentation with a small amount of lemon curd.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- While the cookies are baking, melt the white chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Allow the cookies to cool completely, then pour the melted white chocolate over the top of each cookie and drizzle with additional lemon curd.
