Description

Delightfully tangy and sweet, these Luscious Lemon Heaven Cookies feature a buttery base filled with zesty lemon curd and drizzled with creamy white chocolate. Perfect for any occasion, they are sure to impress friends and family alike!


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup lemon curd (store-bought or homemade)
  • 1 cup white chocolate chips
  • 2 tablespoons heavy cream

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, flattening each slightly. Make a small indentation in the center of each cookie with your thumb.
  • Fill each indentation with a small amount of lemon curd.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • While the cookies are baking, melt the white chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 30 seconds until smooth.
  • Allow the cookies to cool completely, then pour the melted white chocolate over the top of each cookie and drizzle with additional lemon curd.

  • For extra lemon flavor, add lemon zest to the cookie dough.
  • If using homemade lemon curd, ensure it’s chilled for easy filling.
