Description

This indulgent Mac ‘n’ Cheese-Stuffed Meatloaf is the ultimate comfort food!   • For the meatloaf:

    • 2 lbs ground beef

    • 1 cup breadcrumbs

    • 1 egg

    • ½ cup milk

    • 1 tsp salt

    • ½ tsp black pepper

    • 1 tsp garlic powder

    • 1 tsp onion powder

    • ½ cup BBQ sauce

    For the mac ‘n’ cheese filling:

    • 1 cup elbow macaroni, cooked

    • 1 cup shredded cheddar cheese

    • ½ cup heavy cream

    • ½ tsp garlic powder


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, combine ground beef, breadcrumbs, egg, milk, salt, pepper, garlic powder, and onion powder. Mix thoroughly.

  3. In a separate bowl, combine the cooked macaroni, shredded cheddar cheese, heavy cream, and garlic powder. Stir until well mixed.

  4. Shape half of the meat mixture into a loaf shape on a baking sheet. Create a hollow center within the meatloaf to fill with the mac ‘n’ cheese mixture.

  5. Spoon the mac ‘n’ cheese filling into the hollowed-out center.

  6. Cover with the remaining meat mixture, sealing the edges tightly to prevent the filling from spilling out.

  7. Brush the top of the meatloaf with BBQ sauce.

  8. Bake in the preheated oven for 50-55 minutes or until the meatloaf is cooked through.

  9. Let the meatloaf rest for 10 minutes before slicing.

Notes

  • You can use a different type of cheese, such as mozzarella or Monterey Jack, for the mac ‘n’ cheese filling.

  • If you prefer a spicier version, add some hot sauce or cayenne pepper to the meat mixture or BBQ sauce.

 

  • For extra crispy edges, broil the meatloaf for the last 2-3 minutes of baking.
