Instructions

  1. Cook the Pasta: Cook the macaroni according to the package instructions, then drain and set aside.
  2. Make the Cheese Sauce: In a large saucepan, melt 3 tablespoons of butter over medium heat. Add the flour and whisk for 1-2 minutes to form a roux (paste). Gradually add the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook for 3-4 minutes until it thickens slightly.
  3. Add the Cheese: Reduce the heat to low, and stir in the cheddar and Gruyère (or mozzarella) cheese until completely melted and smooth. Season with salt, pepper, Dijon mustard, and garlic powder.
  4. Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir to coat the pasta evenly.
  5. Prepare the Topping: In a small bowl, combine the breadcrumbs with 1 tablespoon of melted butter.
  6. Assemble the Casserole: Preheat the oven to 350°F (175°C). Transfer the cheesy macaroni mixture into a greased 9×9-inch or 2-quart baking dish. Spread the breadcrumb mixture evenly over the top, and sprinkle with a dash of paprika for color (optional).
  7. Bake: Bake the casserole for 25-30 minutes, or until the top is golden brown and the cheese is bubbling.
