Description
Malva Pudding is a rich, moist South African dessert that combines a spongy texture with a sweet, syrupy finish. Topped with a luxurious creamy Amarula sauce, this indulgent treat is perfect for any occasion. The Amarula adds a smooth, fruity depth that elevates the traditional malva pudding to something extraordinary.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 2 tablespoons butter, melted
- 1 tablespoon vinegar
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup apricot jam
- 1/4 cup warm water
- 1 tablespoon Amarula liqueur
- For the Amarula sauce:
- 1/2 cup Amarula liqueur
- 1/2 cup heavy cream
- 1/4 cup sugar
- 2 tablespoons butter
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish (9×9-inch) or individual ramekins.
- In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
- In a separate bowl, beat the eggs until frothy. Add the melted butter, vinegar, vanilla extract, milk, and apricot jam. Stir until smooth.
- Combine the wet and dry ingredients, mixing until just combined. The batter will be slightly runny.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or until the pudding is golden brown and a toothpick comes out clean.
- While the pudding bakes, make the Amarula sauce. In a saucepan, combine the Amarula liqueur, heavy cream, sugar, and butter over medium heat. Stir continuously until the sugar dissolves and the sauce thickens slightly (about 5-7 minutes). Remove from heat and set aside.
- Once the pudding is baked, remove it from the oven and immediately pour the Amarula sauce over the hot pudding, allowing it to soak in.
- Let the pudding sit for 10 minutes to absorb the sauce before serving. Serve warm with extra sauce on the side if desired.
Notes
- Malva pudding can be made ahead and stored in an airtight container for up to 2 days. Reheat before serving.
- If you don’t have Amarula, you can substitute with another cream liqueur like Baileys or Kahlua for a different flavor.
- This dessert pairs beautifully with a scoop of vanilla ice cream or whipped cream.
