Description

Malva Pudding is a rich, moist South African dessert that combines a spongy texture with a sweet, syrupy finish. Topped with a luxurious creamy Amarula sauce, this indulgent treat is perfect for any occasion. The Amarula adds a smooth, fruity depth that elevates the traditional malva pudding to something extraordinary.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup apricot jam
  • 1/4 cup warm water
  • 1 tablespoon Amarula liqueur
  • For the Amarula sauce:
  • 1/2 cup Amarula liqueur
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish (9×9-inch) or individual ramekins.
  2. In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a separate bowl, beat the eggs until frothy. Add the melted butter, vinegar, vanilla extract, milk, and apricot jam. Stir until smooth.
  4. Combine the wet and dry ingredients, mixing until just combined. The batter will be slightly runny.
  5. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until the pudding is golden brown and a toothpick comes out clean.
  6. While the pudding bakes, make the Amarula sauce. In a saucepan, combine the Amarula liqueur, heavy cream, sugar, and butter over medium heat. Stir continuously until the sugar dissolves and the sauce thickens slightly (about 5-7 minutes). Remove from heat and set aside.
  7. Once the pudding is baked, remove it from the oven and immediately pour the Amarula sauce over the hot pudding, allowing it to soak in.
  8. Let the pudding sit for 10 minutes to absorb the sauce before serving. Serve warm with extra sauce on the side if desired.

Notes

  • Malva pudding can be made ahead and stored in an airtight container for up to 2 days. Reheat before serving.
  • If you don’t have Amarula, you can substitute with another cream liqueur like Baileys or Kahlua for a different flavor.
  • This dessert pairs beautifully with a scoop of vanilla ice cream or whipped cream.
